Cultivated in the Mediterranean island of Chios, this liqueur is made from the resin of the Mastiha tree. The sap is tapped and then allowed to harden. This is then distilled along with grain alcohol and then sugar is added to balance it out. The profile is gentle pine and anise and the staff at Astor think it would be amazing with almond biscotti.
