There is something alive about the paradoxical comingling of opposing flavors and textures. Fire and smoke…earth and herbs…yet with an overwhelming intrinsic sweetness of agave that is made even more luxurious by the vanilla imparted through a serious tenure in oak. Illegal Añejo Mezcal tells a story of its own as it simmers on the lips.

These, we felt, were the perfect glasses for a measure of Illegal’s Añejo Mezcal. The skull tumblers are part of Nude’s overall Shade collection, which launched in 2017. They are rare in so many ways, but also for the fact that these designs are made by the company in-house. It’s truly a Nude Glass concept, and they do offer a complementing, larger decanter with a matching skull crafted as the stopper.
Mezcal, like a fine single malt or exquisite wine, is all about the terroir. It’s Mexican culture in liquid form – created from sun and toil, born from arid heat and handed-down knowledge. It’s older than tequila. It is also rarer than tequila. And yet, mezcal is more connected to the everyman.
This month, we chose two of the flagship labels for you – the Habanero and the Jalapeno. Each recipe is focused on that particular pepper, without added sugar or added salt. It’s a sauce for purists, but it’s also a sauce capable of converting those who remain a bit gun shy about spice. The Jalapeno is milder, made with fresh, green jalapenos. A dash of lime juice in the recipe creates a sauce that’s ideal on white fish, in guacamole or when used to spice up a Margarita.
This is a true go-to sauce that takes any dish to the next level. A combination of Jalapeño, lime, onion, garlic and spices delivers smooth heat and bold flavor.
