The blend features apples from the several hundred heirloom trees at Apple Hill Farm in Rochester, Vermont — a 38- acre farm listed on the National Register of Historic Places. Harvested by hand in the fall of 2015, the apples were pressed, fermented with wild yeast, and then aged for 10 months before bottling. The resulting cider is dry, full bodied and complex — very much like the cider that early New England settlers would have been drinking more than 100 years ago.

Every fall, Shacksbury forages for the feral, wild, or otherwise forgotten fruit of rural Vermont. Along narrow country roads and in overgrown old orchards, they seek out apples that have the tannins and flavors — rare in most commercially grown fruit — to ferment into excellent hard cider. These forgotten apple trees are decades, and sometimes centuries, old.
